The shiny side of aluminium foil retains heat better. If we do not want our dish to cool down too quickly, we should wrap it with the shiny side on the inside. We do the same when baking dishes in the oven or on the grill.

The matte side of aluminium foil keeps food fresh longer. When preparing sandwiches for the road, we should wrap them so that the matte side is on the inside and the shiny side on the outside. This way we will limit the inflow of warm temperature, so our sandwiches will not heat up or spoil. When putting food in the fridge, we should also cover it with the shiny side up, which will make it cool down faster.
