De Buyer Affinity Sauté Pan DB3736-20 is a 20 cm stainless steel curved sauté pan designed for even heat distribution and versatile stovetop cooking. The curved walls facilitate efficient reduction of sauces and make it easier to turn and move food during cooking.

• Sautéing and stirring sauces or risottos
• Reducing liquids and finishing dishes on the stovetop

How to use

Preheat the pan on the chosen hob at medium heat before adding oil or butter to ensure an even sear. Add ingredients in a single layer where possible, using the curved walls to toss or stir. Adjust heat as needed to control browning and reduce liquids by keeping the pan uncovered for evaporation. Clean the pan after cooling using warm soapy water and a non-abrasive sponge; avoid harsh scouring that can dull the stainless-steel finish.

Recommendations

For best results, match the burner size to the 20 cm base to maintain even heating. Avoid sudden temperature shocks (for example placing a hot pan under cold water) to preserve the pan’s structure and finish.
