Taglierina Marcato QUADRATO ST-Q60-CHS 60x60 mm noce — taglierina quadrata per pasta

Marcato QUADRATO ST-Q60-CHS 60x60 mm Walnut is a cutter attachment designed to produce uniform 60 × 60 mm square pasta or dough pieces. It is intended for use with compatible Marcato machines and other attachments to simplify shaping of filled pastas, pastries and portioned dough. The walnut-finish housing offers a durable exterior that integrates with kitchen equipment while delivering consistent cutting performance for home cooks and small-scale professional kitchens.

Advantages

The cutter creates precise, identical square pieces with faster throughput compared to manual cutting, reducing preparation time and improving portion control. Its mechanical cutting geometry ensures even edges and uniform size, which is useful for filling and sealing operations. The walnut finish provides an attractive, durable surface that resists wear from regular use. The attachment is compact and designed for easy mounting and removal on compatible Marcato systems.

Suitable for

• Making filled pasta shapes such as ravioli and tortelloni in consistent square portions
• Cutting pastry dough into uniform squares for small tarts or layered desserts
• Portioning dough for production of single-serve baked goods in small-batch kitchens
• Preparing uniform samples or portions for tasting and quality control

Key specifications

• Cutting format: square pieces, nominal size 60 × 60 mm
• Material finish: walnut-coloured external surface
• Compatibility: designed for use with compatible Marcato pasta machines and attachment mounts
• Operation type: manual/mechanical attachment for cutter integration
• Suitable dough thickness: typical fresh pasta and pastry dough thicknesses used with Marcato systems

How to use

Attach the QUADRATO cutter to a compatible Marcato machine or accessory mount following the manufacturer's attachment points. Feed sheets of pasta or rolled dough through the machine at an appropriate thickness so the cutter can separate full squares without tearing; reduce moisture in the dough if sticking occurs. Operate the machine steadily to produce an even series of 60 × 60 mm squares, then remove and, if required, fill, seal or bake according to the recipe. Clean the attachment by removing residual dough with a brush or soft cloth and follow the manufacturer's cleaning instructions to avoid water exposure on non-washable components.

Recommendations

Use well-floured or lightly dusted dough sheets and ensure consistent dough thickness for best results. Check compatibility with your Marcato machine model before mounting, and consult the machine manual for safe attachment and maintenance procedures.
